Heat the Milk, in a thick-bottomed pan, heat the almond or cashew milk on low to medium flame. stir occasionally to prevent sticking and let it reduce to half its quantity.
Sweeten the Milk, add jaggery powder or coconut sugar to the reduced milk. stir well and continue cooking until the sweetener dissolves completely. avoid adding jaggery while the milk is boiling to prevent curdling.
Add Flavors, mix in a pinch of cardamom powder and a few saffron strands. cook for a few more minutes to let the flavors infuse.
Garnish and Serve, turn off the heat, let the rabri cool slightly, and garnish it with chopped nuts. serve warm or chilled for a creamy vegan dessert.
