Boil water, cook the noodles for 3-5 minutes according to package instructions, then drain and set aside.
In a large pan, heat oil over medium heat, then sauté chopped onion and green chilies for 1-2 minutes until fragrant.
Add the sliced bell pepper and sauté for 1-2 minutes until tender.
Add the cooked noodles to the pan, pour in soy sauce and chili sauce, then mix and season with salt to taste.
Sprinkle the grated cheese over the noodles, stirring to combine until the cheese melts and becomes gooey.
