Soak the dal, soak 1 cup chana dal for 2-3 hours, then drain completely.
Grind coarsely, blend the dal without water into a coarse, thick paste.
Mix spices & herbs, add chopped onions, green chilies, curry leaves, coriander, ginger, salt, and cumin for flavor.
Shape the vadas, take small portions, flatten them into discs, and keep them ready for frying.
Heat the oil, heat oil in a deep pan for frying on medium flame.
Fry until crispy, drop the vadas into hot oil and fry until golden brown & crispy on both sides.
