Here's how to make delicious and authentic Rajasthani Kadhi at home in just 7 easy steps.
Prepare the kadhi base, in a bowl, whisk curd, gram flour, water, turmeric, red chili powder, and salt until smooth and lump-free.
Cook the mixture, pour the mixture into a pan and cook on low heat, stirring continuously to prevent curdling. Simmer for 10-15 minutes until it thickens.
Heat ghee & temper spices, in a small pan, heat ghee or oil. add mustard seeds, cumin seeds, dry red chilies, hing, and curry leaves. let them crackle.
Add the tempering, pour the hot tempering over the simmering kadhi and mix well to infuse the flavors.
Simmer further, cook for another 5-7 minutes on low flame, allowing the kadhi to absorb the tempering's aroma.
Adjust consistency, if needed, add more water to adjust the thickness and cook for a few more minutes.
Serve hot, garnish with fresh coriander and serve with steamed rice or bajra roti for an authentic rajasthani meal.
