Prepare Base, heat oil, splutter mustard seeds, add curry leaves, chilies & onions. saute until golden.
Cook Masala, add ginger-garlic paste, spices, and tomatoes. cook until soft.
Add Coconut Milk, pour thin coconut milk, simmer for 5 minutes.
Add Eggs, make small cuts, add eggs, and cook for 5 more minutes.
Finish, stir in thick coconut milk, cook for 2 minutes without boiling serve hot with appam, idiyappam, rice, or parotta.
