Prepare the meat, cut the mutton into bite-sized cubes and pat dry.

Make the marinade, mix yogurt, spices, ginger-garlic paste, mustard oil, and lemon juice.

Marinate the mutton, coat the mutton well with the marinade and let it rest for at least 4 hours or overnight for best results.

Skewer the mutton, thread the marinated mutton pieces onto skewers, leaving space in between.

Preheat the grill, heat a charcoal grill, tandoor, or oven to medium-high heat.

Grill the kebabs, cook on a grill or oven at 200°C, turning occasionally, until tender and charred 15–20 minutes.

Final touch, brush with ghee, cook for 2 more minutes, and let it rest.

Garnish & serve, sprinkle with lemon juice, garnish with coriander and onion rings, and serve hot with mint chutney.
