Marinate the mutton, mix mutton, yogurt, turmeric, red chili powder, salt, and ginger-garlic paste in a bowl. let it marinate for at least 1-2 hours or overnight for best results.
Heat oil & temper spices, heat mustard oil in a deep pan or pressure cooker until it smokes slightly. add cumin seeds and bay leaf, let them splutter.
Saute onions & green chilies, add chopped onions and green chilies, sauté until golden brown.
