Here's how to make Bengali Egg Curry at home.

Boil and Fry the Eggs, boil 4 to 6 eggs. peel them and lightly coat with turmeric and salt. shallow fry them in mustard oil until golden.

Fry the Potatoes, peel and cube 2 medium potatoes. fry in the same oil until lightly golden. keep them aside.

Make the Masala Base, in the same pan, add chopped onions and cook until golden. add ginger garlic paste and cook until the raw smell goes. add chopped tomatoes and cook till soft.

Add Spices, add turmeric, red chili powder, cumin powder, and garam masala. Mix well and cook till the oil separates.

Cook Everything Together, add the fried potatoes to the masala. Add water for gravy and bring to a boil. Once potatoes are almost done, add the fried eggs.

Simmer and Serve, let it simmer for 5 to 7 minutes until everything is well blended. Garnish with coriander leaves.
