Prepare the Chutney Blend 1 cup of fresh coriander, ½ cup of mint leaves, 1 green chili, 1 clove of garlic, ½-inch ginger, salt, and a little lemon juice to make a smooth chutney. Set aside.
Butter and Chutney the Bread Take 6 slices of bread and generously spread butter on one side, followed by a layer of green chutney.
Layer the Filling On three slices, layer the potato, cucumber, tomato, and onion. Sprinkle with chaat masala, salt, and pepper for added flavor. Add a slice of cheese if desired.
Toast and Serve Top with the remaining slices of bread. Toast on a hot tawa or sandwich maker until golden brown and crispy. Slice and serve hot with ketchup and extra chutney.
