Cook the Eggs, scramble 2-3 eggs with salt and pepper in a pan, then set aside.
Sauté Aromatics, in a pan, heat 2 tbsp oil, sauté 1 chopped onion, 1 tomato, and 1 tsp ginger-garlic paste until golden.
Add Spices, mix in 1 tsp biryani masala, 1/2 tsp turmeric, 1/2 tsp chili powder, and salt. cook until fragrant.
Add Rice, stir in 2 cups of leftover rice and mix well with the spices.
Combine and Garnish, add scrambled eggs, mix gently, and garnish with coriander and fried onions.
Serve, hot with raita or salad. enjoy your quick egg biryani.
