Prepare the Dough, in a large mixing bowl, combine wheat flour, grated carrot, chopped spinach, cabbage, green chili, cumin seeds, turmeric, garam masala, and salt. Mix well.
Knead the Dough, slowly add water and knead into a soft, smooth dough. apply a little oil on top and let it rest for 15 minutes.
Divide and Roll, divide the dough into equal-sized balls. roll each ball into a round paratha using a rolling pin and a floured surface.
Cook on Tawa, heat a tawa and place a rolled paratha on it. cook for a minute until bubbles form, then flip.
Apply Ghee/Oil, spread some ghee or oil on the top side, flip again, and press gently to cook evenly. repeat the process for the other side.
Serve Hot, once golden brown and crisp, remove from the tawa and serve with yogurt, pickle, or chutney.
