Prepare the yogurt, mix greek yogurt with minced garlic and a pinch of salt. set aside.

Poach the eggs, heat water in a pan, add vinegar, and create a gentle swirl. crack in the eggs and poach for 3 minutes until whites are set.

Make the spiced butter, melt butter in a pan, add red chili flakes, and let it sizzle for 30 seconds.

Assemble the dish, spread the yogurt on a plate, place poached eggs on top, and drizzle with spiced butter.

Garnish & serve, sprinkle with fresh dill or parsley and serve immediately with crusty bread.
