Soak Chickpeas and Rice, soak 1 cup of chickpeas and ½ cup of rice in water for 6-8 hours or overnight. this softens them, making them easier to blend.
Blend the Batter, drain the soaked chickpeas and rice. blend with a little water to create a smooth, thick batter. add salt to taste.
Add Spices and Herbs, mix in finely chopped green chilies, cumin seeds, and fresh coriander leaves for flavor. adjust consistency with water if needed.
Cook the Dosa, heat a non-stick pan and pour a ladleful of batter, spreading it thinly in a circular motion. drizzle a few drops of oil on the edges and cook until golden brown.
Serve Hot, flip and cook the other side if needed. serve hot with coconut chutney or tomato chutney, and enjoy your protein-packed chickpea dosa.
