Boil the Potatoes, boil 3-4 medium-sized potatoes until they are soft. Peel and cut them into small cubes.

Heat the Oil, in a pan, heat 2 tablespoons of ghee or oil preferably peanut oil or ghee, suitable for fasting. Add cumin seeds, and let them splutter.

Add Green Chilies and Ginger, add finely chopped green chilies and grated ginger. Sauté for a minute until aromatic.

Cook the Potatoes, add the boiled potato cubes to the pan. Stir and cook them for 5-7 minutes on medium heat until they start turning golden.

Add Spices, sprinkle rock salt, black pepper, over the potatoes. Mix well and cook for another 2-3 minutes.

Garnish, with freshly chopped coriander leaves and serve the vrat aloo hot with vrat-friendly bread like kuttu puri or rajgira roti. Enjoy your flavorful fasting dish.
