Roast the brinjal directly over flame or in an oven until the skin is charred and the inside is soft. Cool and peel the skin off.

Mash the peeled brinjal well with a fork or spoon and keep it aside.

Saute Spices, heat oil in a pan, add cumin seeds, then saute onions, green chilies, and ginger-garlic paste until golden.

Add chopped tomatoes, turmeric, red chili powder, and salt. cook until tomatoes turn soft and the masala releases oil.

Mix in the Brinjal, and add the mashed brinjal to the pan. mix thoroughly and cook for 5–7 minutes, stirring occasionally.

Garnish and Serve, turn off the heat, garnish with fresh coriander leaves, and serve hot with roti, naan, or paratha.
