Boil Potatoes, Take 4-5 medium potatoes, peel, and cut them into bite-sized pieces. Boil them in salted water until tender, then drain and let cool.

Prepare Dressing, In a bowl, mix 2-3 tablespoons of Greek yogurt (or low-fat mayo), 1 teaspoon mustard, 1 tablespoon lemon juice, salt, pepper, and a drizzle of olive oil for a creamy, healthy dressing.

Add Vegetables, Dice cucumbers, celery, red onions, and cherry tomatoes. Add them to the cooled potatoes for crunch and freshness.

Mix Everything, Gently toss the boiled potatoes, chopped veggies, and dressing together until well combined.

Garnish & Serve, Garnish with fresh herbs like parsley or dill. Serve chilled or at room temperature.
