Make the Base, in a saucepan, heat 2 cups whole milk and 1 cup heavy cream until warm.
Mix Egg Yolks & Sugar, in a bowl, whisk 4 egg yolks with ¾ cup sugar until pale and creamy.
Combine & Cook, slowly pour the warm milk into the egg mixture while stirring. return to the pan and cook on low heat, stirring constantly, until it thickens slightly.
Cool & Flavor, remove from heat, add vanilla extract or your favorite flavor, cool completely, and chill in the fridge for 4–6 hours.
Churn & Freeze, churn the chilled mixture in an ice cream maker, freeze until set.
