Heat mustard oil in a pan. Add curry leaves and rai to the hot oil and fry them until aromatic.

Peel and cut potatoes into fries. also, slice green chilies into long pieces.

Add the cut potatoes and green chilies to the pan. sprinkle some turmeric and stir well. fry the potatoes for 2-3 minutes.

Add red chili powder to the frying potatoes, and cook for another 2 minutes until the potatoes are crispy and golden.

Serve the spicy potatoes with steamed rice and a side of Punjabi pakora curry for a perfect meal.
