Gather Ingredients, take 2 ripe bananas, 1.5 cups flour, 1/2 cup brown sugar, 1/3 cup oil, 1 tsp each of baking soda, baking powder, and vanilla extract, 1/2 cup walnuts, and a pinch of salt.
Preheat Oven, the oven to 180°C (350°F) and grease or line a baking pan with parchment paper.
Combine Dry and Wet Mixtures, mix flour, baking soda, baking powder, and salt separately. fold it gently into the wet mix, then add chopped walnuts.
Mix Wet Ingredients, mash bananas in a bowl, add oil, vanilla extract, and brown sugar, and whisk until smooth.
Bake the Cake, pour the batter into the baking pan and bake for 30-40 minutes or until a toothpick comes out clean.
Cool and Serve, let the cake cool for 10 minutes, slice, and enjoy your soft, vegan banana walnut cake.
