Fry the Potatoes, heat 1 tbsp oil in a pan and fry the boiled baby potatoes until golden. set aside.
Prepare the Masala, in the same pan, heat 1 tbsp oil and add cumin seeds. once they crackle, add chopped onions and saute until golden brown. mix in ginger-garlic paste and cook for a minute.
Add Tomatoes and Spices, add tomato puree, turmeric, red chili powder, and salt. cook until the oil separates from the masala.
Combine Potatoes and Curd, lower the heat, add the fried potatoes and curd to the masala, and stir well. cover and cook for 10 minutes, letting the flavors blend.
Finish and Garnish, sprinkle garam masala and garnish with fresh coriander leaves. serve hot with puris or parathas.
