How to make Christmas Rum Cake at home in 6 steps.

Prepare the Fruit Mixture, soak mixed dried fruits in rum overnight. This adds rich flavor to your cake. drain before use, reserving the rum for later.
Mix Dry Ingredients, in a bowl, combine flour, baking powder, cinnamon, and nutmeg. sift well to ensure even mixing of spices.
Cream Butter and Sugar, beat butter and sugar together until light and fluffy. add eggs one at a time, mixing well after each addition. stir in vanilla extract.
Combine Ingredients, gradually add the dry ingredients to the wet mixture, alternating with the reserved rum. fold in the soaked dried fruits gently.
Bake the Cake, preheat your oven to 350°F (175°C). pour the batter into a greased and lined cake tin. bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve, allow the cake to cool completely. brush with additional rum for a moist and flavorful finish. slice and serve your homemade christmas rum cake.
