Here's how to make coconut rice at home.

Cook the Rice, rinse 1 cup of rice and cook it with 2 cups of water until soft but not mushy. let it cool.

Prepare the Coconut, grate fresh coconut or use unsweetened shredded coconut.

Temper the Spices, heat 2 tbsp oil or ghee in a pan. add mustard seeds, curry leaves, 2 dried red chilies, and 1 tsp urad dal. saute until the seeds splutter and the dal turns golden.

Add Coconut and Spices, stir in the grated coconut and sauté for 2–3 minutes. add a pinch of asafoetida and salt to taste.

Mix with Rice, add the cooked rice to the pan and gently mix to combine the flavors.

Serve, the coconut rice warm, garnished with roasted cashews or coriander leaves for extra flavor. perfect for a light, healthy meal.
