Here's how to make Bengali Mishti Doi in 5 steps.

Heat the Milk, take 1 liter of full-fat milk in a pan and simmer it on low heat until it reduces to half. stir occasionally to prevent burning.

Add Jaggery, once the milk is reduced, add ½ cup of grated jaggery. stir well until it dissolves completely. let the mixture cool slightly.

Add Yogurt Culture, when the milk is lukewarm, add 2-3 tablespoons of fresh yogurt and mix well. this helps in fermentation.

Set the Mishti Doi, pour the mixture into earthen pots or any container. cover it and let it set undisturbed in a warm place for 6-8 hours or overnight.

Chill and Serve, once set, refrigerate for a few hours. serve chilled Mishti Doi as a creamy, sweet treat.
