Prepare the Rice, cook rice until soft, let it cool, then mash slightly to make it creamy. add curd and mix well.
Tempering, heat ghee in a pan, add mustard seeds, urad dal, and let them splutter. then add chopped green chilies, grated ginger, and curry leaves.
Mixing, pour the tempering over the curd rice and mix gently. add salt to taste and stir well.
Adjust Consistency, if needed, add a little milk to make it smoother and creamier.
Garnishing, mix in fresh coriander and pomegranate seeds for extra flavor and texture.
Serve, chilled or at room temperature with a side of pickle or papadam.
