Here's how to make Chicken stew at home.

Saute Aromatics, heat oil/ghee in a deep pot. add bay leaf, cloves, and cardamom. saute sliced onions until golden, then add ginger-garlic paste and green chilies.

Add the chicken pieces and sear them on high heat for 3–4 minutes until lightly browned.

Add Veggies, mix in chopped tomato, potatoes, and carrots. saute for another 3–4 minutes to blend flavors.

Season and Simmer, add salt, black pepper powder, and enough water or stock to cover the chicken. bring it to a boil.

Cook Until Tender, cover and cook on low flame for 25–30 minutes, or until the chicken and veggies are fully tender.

Garnish and Serve, turn off the heat, garnish with fresh coriander, and serve hot with rice, bread, or appam.
