Here's how to make Kolkata-style Egg Roll at home in 7 easy steps.

Make the Dough, mix maida, salt, and water to knead a soft dough. rest for 15–20 minutes.
Prepare the Filling, slice onions, cucumber, and mix with a little lemon juice, salt, and chaat masala. keep aside.
Roll and Cook the Paratha, divide the dough, roll into thin circles, and cook on a tawa with oil/ghee until golden and slightly crispy.
Cook the Egg Base, crack 1 egg, beat with salt and pepper. pour on the tawa and immediately place the hot paratha over it so it sticks to the egg.
Flip and Cook, flip the paratha and cook till the egg side is done.
Add filling, place the egg paratha on a plate, add onion-cucumber mix, sauces, and green chutney or ketchup.
Roll and Serve, tightly roll the paratha, wrap with paper, and serve hot
