Roast the Vegetables, 2 medium-sized potatoes, and 2 tomatoes directly over an open flame or in the oven until soft and charred. let them cool.
Peel and Mash, peel the roasted potatoes, and tomatoes. mash them together in a bowl, leaving the mixture slightly chunky.
Prepare the Seasoning, heat 1 tbsp mustard oil in a pan. add 1 tsp cumin seeds, 1 finely chopped green chili, and 1 small finely chopped onion. saute for 2-3 minutes.
Mix with the Mashed Vegetables, add the sauteed onion, chili, and cumin mixture to the mashed vegetables. stir in 1 tsp lemon juice, 1/2 tsp red chili powder, 1/2 tsp salt, and fresh coriander leaves. mix well.
Serve, the Aloo Chokha with hot roti or paratha, garnished with additional coriander leaves and a drizzle of mustard oil.
