Blend the walnuts, in a food processor or blender, pulse the walnuts until finely ground but not pasty.
Heat the almond milk, in a saucepan, heat the almond milk on medium heat until it begins to simmer.
Mix in cocoa powder, whisk the cocoa powder into the almond milk until fully combined and smooth.
Add sweetener & salt, stir in the sugar-free sweetener, vanilla extract, and a pinch of salt for flavor balance.
Incorporate walnuts, gradually add the ground walnuts to the mixture, stirring well to ensure an even texture.
Optional thickening with chia seeds, if you want a thicker pudding, add chia seeds and stir thoroughly. let the mixture sit for about 10 minutes to allow the chia seeds to expand.
Chill and serve, pour the pudding into serving bowls or glasses and refrigerate for at least 2 hours. garnish with extra walnuts or a sprinkle of cocoa before serving.
