Cook the Dal, wash the dal and pressure cook with water, salt, and turmeric for 3-4 whistles until soft. mash slightly and set aside.
Prepare the Tadka Base, heat ghee in a pan, add cumin seeds, dried chilies, and chopped onions. saute until golden brown.
Add Tomatoes & Spices, stir in ginger-garlic paste, cook for a minute, then add tomatoes, red chili powder, garam masala, and kasuri methi. cook until oil separates.
Mix in the Dal, pour the cooked dal into the pan, mix well, and let it simmer for 5-10 minutes for flavors to blend. adjust consistency with water if needed.
Final Tadka, in a small pan, heat ghee, add cumin seeds, dried chilies, and a pinch of red chili powder. pour this sizzling tadka over the dal.
Garnish & Serve, sprinkle fresh coriander, add lemon juice if desired, and serve hot with rice or roti.
