Prepare the dough, in a mixing bowl, combine ragi flour, rice flour, salt, cumin seeds, sesame seeds, and red chili powder. add 1 tbsp oil and mix well. gradually add water to form a soft, smooth dough.

Roll the dough, roll the dough into small balls and flatten each ball with your hands or a rolling pin to form thin discs.

Heat the oil, heat oil in a deep pan or wok over medium heat for frying the chips.

Fry the chips, once the oil is hot, gently slide in the flattened dough discs and fry until golden and crisp, around 2-3 minutes. fry in batches if needed.

Drain excess oil, remove the chips using a slotted spoon and place them on a paper towel to drain any excess oil.

Serve, serve your crispy ragi chips as a healthy snack with your favorite dip or enjoy them plain.
