Here's How to make delicious South Indian Lemon Rice at home in 7 easy steps.
Prepare the Rice, use freshly cooked and cooled rice or leftover rice. spread it on a plate and add 1½ tbsp lemon juice. set aside.
Heat the Oil, in a pan, heat 1 tbsp oil over medium heat.
Temper Mustard Seeds, add ½ tsp mustard seeds and let them splutter. then, add 1 dried red chili, 1-2 chopped green chilies, and 1 sprig curry leaves.
Fry Nuts & Spices, toss in 2 tbsp peanuts or cashews and fry until golden brown. add ½ tsp turmeric powder and mix well.
Add Cooked Rice, lower the heat and add the cooked rice to the pan.
Mix & Season, stir gently to combine everything. add ½ tsp salt and mix well.
Garnish & Serve, sprinkle chopped coriander leaves, mix again, and serve warm with curd, pickle, or papad.
