Boil the potatoes, boil and peel the baby potatoes and set aside.
Fry the potatoes, heat mustard oil, fry the potatoes until golden, and remove.
Temper spices and add aromatics, in the same oil, splutter cumin, fennel, nigella, fenugreek seeds, and asafoetida. add green chilies and ginger paste, and saute briefly.
Cook the tomatoes, add tomato puree, turmeric, red chili powder, and coriander powder. cook until the oil separates from the masala.
Combine potatoes and masala, mix the fried potatoes with the cooked masala, then add garam masala, amchur powder, and salt. cook for 2-3 minutes.
Garnish and serve, garnish with fresh coriander leaves and serve hot with puris, parathas, or rice.
