Saute the vegetables, heat olive oil in a pan, saute the mixed vegetables until slightly tender, and season with salt, pepper, and italian seasoning.
Cook the rice, thouroughly was the rice, boil and cook the rice.
Mix rice with sauce, in a large bowl, combine the cooked rice with marinara sauce, ensuring the rice is evenly coated.
Layer the dish, spread half of the rice mixture into the greased baking dish. add a layer of sauteed vegetables on top.
Add cheese layers, sprinkle half of the mozzarella and parmesan cheese over the vegetables.
Bake the rice, bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly with a golden crust.
Serve hot, garnish with fresh basil or parsley and serve the italian baked rice hot for a delicious lunch.
