Prepare the Base, in a large mixing bowl, combine the cooked chickpeas and diced boiled potatoes.
Add Fresh Vegetables, to the bowl, add chopped onions, tomatoes, green chilies, and cilantro.
Incorporate Chutney, drizzle tamarind chutney over the mixture, adjusting the quantity to achieve your desired tanginess.
Season the Chaat, sprinkle chaat masala, roasted cumin powder, red chili powder, and salt over the ingredients.
Mix Thoroughly, gently toss all the ingredients to ensure they are well combined and evenly coated with the spices and chutney.
Add Citrus Zest, squeeze fresh lemon juice over the chaat to enhance its tangy flavor.
Garnish and Serve, transfer the chaat to a serving dish. Garnish with sev or crushed papdi for added crunch.
