Cook moong dal, wash and pressure cook moong dal with turmeric and 1½ cups water until soft. mash well.
Cook vegetables, in a pan, cook chopped onions, tomatoes, and vegetables with salt and sambar powder.
Add tamarind & dal, mix in tamarind pulp and mashed dal, stirring well. Let it simmer for 5 minutes.
Prepare tempering, heat oil, splutter mustard, cumin, red chili, curry leaves, and hing.
Mix & serve, pour tempering over sambar, mix well, and serve hot with idli, dosa, vada, or rice.
