Marinate the Mutton, mix 500g mutton with yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, salt, and lemon juice. let it marinate for 1-2 hours or overnight.
Prepare the Rice, soak 2 cups basmati rice for 30 minutes. boil with whole spices and cook until 70% done. drain and set aside.
Fry the Onions, fry 2 sliced onions in ghee or oil until golden. set aside.
Cook the Mutton, in a pan, heat oil, add whole spices, and cook the marinated mutton until tender. add a few fried onions for extra flavor.
Layer the Biryani, in a pot, layer the cooked mutton, then the rice. top with fried onions, saffron milk, mint, and coriander leaves.
Dum Cooking, seal the pot and cook on low heat for 20-25 minutes to blend the flavors.
Serve, mix gently and serve hot with raita or salad.
