Boil or fry the jackfruit, lightly boil jackfruit pieces in water for 5-7 minutes or deep-fry them until golden brown. drain and keep aside.
Heat oil & saute spices, heat mustard oil in a pan until it smokes slightly, then add cumin seeds and let them splutter.
Cook onions & ginger-garlic, add chopped onions and sauté until golden brown. stir in ginger-garlic paste and cook until fragrant.
Add tomato puree & spices, pour in tomato puree, then add turmeric, red chili, coriander powder, and salt. cook until oil separates.
Add jackfruit pieces, mix in the boiled or fried jackfruit, ensuring they are well coated with the masala.
Simmer with water, pour in a cup of water, cover, and let it simmer for 10-15 minutes until jackfruit is tender.
Add garam masala, sprinkle garam masala for enhanced flavor and mix well. adjust salt if needed.
Garnish & serve, garnish with fresh coriander leaves and serve hot with roti, paratha, or rice.
