Here's how to make Eid special Mutton Biryani at home.

Marinate the Mutton, mix mutton with yogurt, ginger-garlic paste, lemon juice, turmeric, chili powder, biryani masala, and salt. let it marinate for 2-4 hours.

Cook the rice and boil it in water with salt and whole spices. add soaked basmati rice and cook until 70-80% done drain and keep aside.

Make the Gravy, heat ghee/oil, and fry onions until golden brown. add tomatoes, garam masala, coriander, and cumin powder. cook marinated mutton until tender.

Layer the Biryani in a pot, add a layer of rice, and then add mutton gravy. sprinkle fried onions, mint, and coriander. repeat the layers.

Add Saffron and Ghee, drizzle saffron milk and melted ghee on top.

Dum Cooking, cover with foil or a tight lid cook on low flame for 20-25 minutes.

Serve and enjoy, let the biryani rest for 10 minutes before serving. garnish with fried onions and fresh mint leaves. serve hot with raita or salan.
