Cook the Rice, boil rice in salted water with whole spices until 90% cooked. drain and set aside.
Sauté Onions and Spices, in a large pan, heat oil or ghee. add sliced onions and sauté until golden brown, then add ginger-garlic paste and sauté until fragrant.
Cook the Vegetables, add mixed vegetables and sauté for 5-7 minutes. add turmeric, red chili powder, and salt, and mix well.
Add Tomato and Yogurt, stir in chopped tomato and cook until soft. add yogurt, garam masala, and a handful of chopped coriander and mint. cook until the mixture thickens.
Layer the Biryani, in the same pan, layer the vegetable mixture with cooked rice, sprinkling fresh coriander and mint between layers.
Steam the Biryani, cover and cook on low heat for 10-15 minutes, allowing the flavors to blend. serve hot.
