Prepare the Dough, mix all-purpose flour, semolina, carom seeds, cumin seeds, salt, and ghee or oil in a bowl until crumbly. slowly add water to form a firm dough and let it rest for 15–20 minutes.

Shape the Mathris, divide the dough into small balls, flatten them slightly, or roll the dough into a disc and cut with a cookie cutter.

Prick the Mathris, prick the surface with a fork to keep them from puffing up during frying.

Fry the mathris, in medium-hot oil, turning until golden and crispy.

Cool and Store, drain excess oil, let them cool, and store in an airtight container.
