Marinate the mutton, mix mutton with sliced onions, garlic, ginger, curd, mustard oil, and spices. let it marinate for 1-2 hours.

Temper the whole spices, heat mustard oil in a pot, add bay leaves, cardamoms, cloves, cinnamon, and peppercorns. saute for 30 seconds.

Add the marinated mutton, add marinated mutton to the pot, stir well, and cook on medium-high for 8-10 minutes until oil separates.

Slow cook the mutton, cover the pot with a tight lid and cook on low heat for 1.5-2 hours until the mutton is tender.

Adjust and serve, check the gravy consistency, add water if needed, simmer for 5-10 minutes, garnish with coriander, and serve hot.
