Beat the Eggs, crack the eggs into a bowl and whisk them thoroughly until the yolks and whites are fully combined. whisk for about 1-2 minutes to incorporate air, which makes the omelette fluffy.
Heat the Pan, place a non-stick pan on low heat. add 1 tablespoon of butter and let it melt slowly, ensuring the butter doesn’t brown.
Pour the Eggs, once the butter has melted, pour the beaten eggs into the pan. let them sit for just a few seconds until they begin to set around the edges.
Stir Gently, using a spatula, gently stir the eggs, moving them around the pan while still allowing the omelette to set. this will create soft, fluffy curds. tilt the pan to let the uncooked egg flow to the edges.
Shape the Omelette, once the eggs are mostly set but still slightly runny in the center, stop stirring. smooth the surface and gently fold the omelette in half or roll it up into a traditional french style.
Serve, slide the omelette onto a plate, season with salt and pepper, and garnish with fresh herbs if desired. serve immediately while it's warm and fluffy.
