Prepare the Batter, in a mixing bowl, combine rava, rice flour, grated coconut, cumin seeds, green chilies, and salt. add water gradually to make a thin, smooth batter. let it rest for 10-15 minutes.
Check Consistency, after resting, adjust the batter consistency by adding more water if needed. it should be runny for crispy dosas.
Heat the Pan, heat a non-stick or cast-iron dosa pan. grease it lightly with oil using a brush or paper towel.
Pour the Batter, pour a ladleful of batter from the edges toward the center to form a thin dosa. avoid spreading the batter with a spoon.
Cook the Dosa, drizzle oil around the edges and cook on medium heat until the dosa turns golden and crisp. no need to flip.
Serve Hot, remove the dosa from the pan and serve immediately with coconut chutney, sambar, or any dip of your choice.
