Heat oil and saute aromatics, heat oil in a pan, add cumin seeds, and let them splutter. add minced garlic, ginger, and onions, saute until golden.
Add tomatoes and spices, stir in tomato puree, turmeric, red chili powder, coriander powder, and salt. cook until the oil separates.
Add mushrooms and peas, add mushrooms and peas, mixing well with the masala. cook for 5-7 minutes, stirring occasionally.
Add water and simmer, pour ½ cup water, cover, and simmer for 5 minutes until mushrooms are tender and peas are cooked.
Garnish and serve, garnish with fresh coriander leaves and serve hot with roti or rice.
