Roast the Rava, heat oil and roast rava until light golden, then set aside.

Prepare the Tempering, in the same pan, heat oil, add mustard seeds, cumin, chana dal, urad dal, ginger, curry leaves, and asafoetida, then sauté until golden.

Mix Ingredients, in a bowl combine roasted rava, tempering, yogurt, salt, and mix well.

Add Water, gradually add water to form a thick batter; let sit for 10-15 minutes.

Prepare Steamer, grease idli molds and preheat steamer on medium-high.

Add Baking Soda, add to batter, mix gently.

Steam Idlis, pour batter into molds, steam for 12-15 minutes until cooked.
