Dry Roast Ingredients, roast 1/2 cup urad dal and 1/4 cup chana dal until golden. roast 2 tbsp sesame seeds and set them aside.
Toast Spices, roast 8-10 dried red chilies and curry leaves until crispy.
Cool and Combine, let the roasted ingredients cool, then combine them in a bowl.
Add Seasonings, mix in 1/4 tsp asafoetida and 1 tsp salt.
Grind the Podi, grind the mixture to a coarse or fine powder as desired.
Store and Serve, store in an airtight container and serve with idli, dosa, or uttapam, mixed with sesame oil or ghee.
