Preheat and prepare carrots, preheat oven to 400°F. peel and halve carrots lengthwise, place on a lined baking sheet.

Make glaze, mix olive oil, harissa paste, honey, salt, and pepper in a bowl until smooth.

Coat carrots, drizzle glaze over carrots and toss to coat evenly. arrange in a single layer.

Roast, roast for 25–30 minutes, turning halfway, until tender and caramelized.

Serve, garnish with parsley or cilantro and serve warm as a side or snack.
