Here's how to make authentic Goan Prawn Balchao at home in just 8 easy steps.
Marinate the prawns, coat prawns with turmeric and salt, let them sit for 10 minutes, then lightly saute in oil and set aside.
Prepare the masala paste, grind soaked red chilies with vinegar into a smooth paste.
Saute onions & spices, heat oil in a pan, add mustard and cumin seeds. once they splutter, saute onions until golden.
Add ginger-garlic & spice mix, stir in ginger-garlic paste and cook for 1-2 minutes, then add red chili powder, turmeric, coriander powder, and garam masala.
Mix in the masala paste, add the ground chili paste, stir well, and cook until oil separates.
Add vinegar & sugar, pour in vinegar, add sugar, and cook for another 2 minutes to balance flavors.
Cook the prawns, toss in the prawns, mix well, and simmer for 5 minutes until fully coated and cooked.
Serve & enjoy, garnish with fresh coriander and serve hot with rice or pav.
