Here's how to make soft and delicious Vermicelli Idli at home in just 7 easy steps.
Roast the vermicelli & semolina, heat a pan with ½ tbsp oil and roast vermicelli and semolina on low flame until golden and fragrant. set aside to cool.
Prepare the tempering, in the same pan, heat the remaining oil, add mustard seeds, urad dal, green chili, curry leaves, and grated carrot. saute for a minute until aromatic.
Mix the batter, in a large bowl, combine roasted vermicelli, semolina, curd, salt, and the tempered ingredients. gradually add water and mix well to form a thick batter.
Rest the batter, let the batter rest for 10 minutes to allow the semolina and vermicelli to absorb moisture and soften.
Add eno fruit salt, just before steaming, add eno fruit salt, mix gently, and immediately pour the batter into greased idli molds.
Steam the idlis, steam the idlis in an idli cooker or steamer for 10-12 minutes on medium heat until they become soft and fluffy.
Serve hot & enjoy, remove the idlis from the molds and serve them warm with coconut chutney or sambar.
