Prepare the dough, in a mixing bowl, combine 1 cup rice flour, ½ cup all-purpose flour, and ¼ cup semolina. add salt, finely chopped onions, green chilies, curry leaves, and grated coconut.

Add seasoning, heat 2 tbsp oil and pour it over the flour mixture. mix well, then slowly add water to form a stiff dough. let it rest for 10 minutes.

Shape the vadas, take small portions of the dough and flatten them into discs using your palms. keep them slightly thick to maintain their crispy yet soft texture.

Fry the vadas, heat oil in a deep pan. fry the vadas on medium heat until golden brown and crisp on both sides. remove and drain excess oil.

Serve and enjoy, serve maddur vada hot with coconut chutney or a cup of tea. enjoy this crispy and flavorful south indian snack.
